Nadine, Jean-François and Éric Laurent come from a family of hoteliers and restaurateurs for several generations. Éric worked in service and in sommelier, becoming a hotel manager. Jean-François worked in restaurants, he studied with Pierre Troisgros and Michel Guérard.
After being exiled to the four corners of the world, they returned to Mirepoix in Ariège, a region that they particularly like for its history, its landscapes, its regional products and its gentleness of live.
